About the Recipe
Moist chocolate bread loaf that tastes like cake.

Ingredients
(Yields one – 9 x 5 x 3 inch loaf.)
1Â 1/2 Â cups shredded raw zucchiniÂ
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/2 cup canola or vegetable oil
1/2 cup white sugar
1/2 cup light brown sugar
2 large eggs
1 teaspoon pure vanilla extract
3/4 cup semi sweet chocolate chips
Preparation
Preheat oven to 350°F and grease a 9x5x3 inch loaf pan.
Grate the zucchini. I prefer to use a fine to medium blade shredder. If you have a Salad Master, it works great for this task. If not, you can purchase a vegetable/cheese grater online. Do NOT squeeze the zucchini dry. The liquid will make the bread moist.
In a large bowl whisk together the flour, cocoa powder, baking soda, baking powder, salt, cinnamon, and allspice. Set aside.
In an electric mixer bowl (or with a hand mixer), beat the oil, sugars, eggs, and vanilla extract for about 2 minutes.
Fold in the grated zucchini.Â
Add the flour mixture, beating just until combined.Â
Fold in the chocolate chips.Â
Add the batter to prepared pan and bake until a toothpick inserted in the center comes out clean. Bake time is 55-65 minutes.
